Le Pavillon
Le Pavillon takes the name of the historic enclosure in the heart of the vineyard, still partly surrounded by the old wall, where butterflies come to take advantage of the gaps to take refuge.
This dry white cuvée, from Chenin vines 30 to 40 years old, is cultivated on very old and varied north/east facing soil, composed of fine sandstone, flakes of micas, flaky or charcoal claystones, and the "square stone, a hard and clear local volcanic rock. Raised for several months in a concrete egg, it symbolizes the permanent quest for balance with nature.
